Tzatziki

Dips & Dressings

Ingredients

  • 1 cucumber

  • 250g natural live yoghurt

  • 1 garlic clove, crushed

  • Handful of mint leaves, chopped

  • Olive oil

Preparation

 

  1. Grate the cucumber and squeeze out all the liquid.

  2. Tip into a bowl with the yoghurt, garlic and mint, and mix well.

  3. Blitz in a blender until desired consistency is reached.

  4. Drizzle with olive oil and extra mint leaves.

Notes

Use as a dip for crudites or a dressingfor salads, roasted veg or cooked lamb.
