Ingredients
1 cucumber
250g natural live yoghurt
1 garlic clove, crushed
Handful of mint leaves, chopped
Olive oil
Preparation
Grate the cucumber and squeeze out all the liquid.
Tip into a bowl with the yoghurt, garlic and mint, and mix well.
Blitz in a blender until desired consistency is reached.
Drizzle with olive oil and extra mint leaves.
Notes
Use as a dip for crudites or a dressingfor salads, roasted veg or cooked lamb.
