Ingredients
2 large eggs
2 tbsp ground almonds
1 tbsp chia seeds
1 large banana, mashed
Preparation
Combine the ingredients to make a batter (lumps of banana are okay!)
Heat a little coconut or MCT oil in a frying pan. Ladle the mixture and cook gently on both sides for about 2 minutes.
Top with full-fat natural live yoghurt (green Yeo Valley is my favourite) and a handful of colourful berries (I use a frozen mix)
Notes
You may need to experiment with quantities to get the batter to find the perfect consistency. The type of pancakes you're aiming for are the thick and fluffy American style. Adding a good mix of colourful berries will not only add a burst of flavour, but they're also packed with polyphenols that are great for your gut health.
