

Ingredients
1 tbsp coconut oil
1 clove garlic, crushed
1 onion, diced
500g minced beef
280g sliced mushrooms
300ml sour cream
1 tsp paprika
1 small lemon, juiced
small bunch parsley, chopped
Preparation
Heat the oil in a large pan, add onion and cook for 5 minutes until soft. Then add garlic stirring until it’s fragrant, then add the beef. Season with salt and pepper.
Continue cooking the beef and break up the grounds with a wooden spoon. Transfer the cooked beef to a bowl and set aside.
Drain most of the fat from the pan, add the mushrooms and cook until the mushrooms are tender. Set the mushrooms aside.
Turn the heat down to low, then whisk in the sour cream and paprika. Add the cooked beef and mushrooms back into the pan and stir together. Mix in the lemon juice and parsley, check seasoning and serve.
