Ingredients
Classic Hummus:
1 can chickpeas (rinsed)
1 small garlic clove, peeled and crushed
3 tbsp tahini
1 lemon juiced (or more to taste)
½ zested 1-2 tbsp extra virgin olive oil 60-90ml water (add more if needed)
½ tsp salt
Additional ingredients for Beetroot Hummus:
2 medium beetroots
2tsp cumin seeds
olive oil
fresh mint leaves
Preparation
Preheat oven to 200C.
Wear washing-up gloves to prevent staining your hands, peel the beetroots, and cut them into quarters.
Wrap the beetroots in foil with the cumin seeds and olive oil. Roast for 40 minutes - 1 hour, depending on the size of the beetroots.
Once cooled, add to the classic hummus mix and blitz in the blender with a small bunch of fresh mint leaves.
