Beetroot Hummus

Ingredients

Classic Hummus:

  • 1 can chickpeas (rinsed)

  • 1 small garlic clove, peeled and crushed

  • 3 tbsp tahini

  • 1 lemon juiced (or more to taste)

  • ½ zested 1-2 tbsp extra virgin olive oil 60-90ml water (add more if needed)

  • ½ tsp salt

Additional ingredients for Beetroot Hummus:

  • 2 medium beetroots

  • 2tsp cumin seeds

  • olive oil

  • fresh mint leaves

Preparation

  1. Preheat oven to 200C.

  2. Wear washing-up gloves to prevent staining your hands, peel the beetroots, and cut them into quarters.

  3. Wrap the beetroots in foil with the cumin seeds and olive oil. Roast for 40 minutes - 1 hour, depending on the size of the beetroots.

  4. Once cooled,  add to the classic hummus mix and blitz in the blender with a small bunch of fresh mint leaves.
