Lamb and Pistachio Patties

Light Bites

Ingredients

  • 150g shelled pistachio nuts

  • 2 large eggs

  • 500g minced lamb

  • 1 onion, finely chopped

  • 2 tsp ground cumin

  • 3 tsp sumac

  • 1 tsp ground coriander

  • 1 tsp dried oregano

  • Zest of 1 lime

Preparation

  1. Blitz 100g of the pistachios in a food processor until finely ground. Lightly pulse the remaining pistachios.

  2. Combine the rest of the ingredients with the nuts; using your hands, work the mixture thoroughly until the texture has broken down and the egg and pistachio are evenly distributed.

  3. Divide the mixture into 10 balls and shape them into patties. Use a lug of olive oil to coat a nonstick frying pan, fry a batch of patties at a time until the undersides form a nice brown crust (about 6 minutes). Flip them over until both sides are done. 

Notes

Serve with Tzatziki and a green salad.
Tzatziki
•1 cucumber •250g natural live yoghurt •1 garlic clove, crushed •handful of mint leaves, chopped
Grate the cucumber and squeeze out all the liquid. Tip into a bowl with the yoghurt, garlic and mint, and mix well.
