Pine Nut Crusted Salmon

Ingredients

  • 2 red onions, thickly sliced

  • 2 salmon fillets

  • 2 tsp Dijon mustard

  • 25g pine nuts, chopped

  • a handful of flat leaf parsley, chopped

  • 250g cooked puy lentils

  • 1 bag watercress

  • 1 lemon, juiced

Preparation

  1. Preheat the oven to 180C fan/200C/gas 6

  2. Mix the onions with 1 Tbsp olive oil and sea salt in a roasting tin.

  3. Spread the top of the salmon fillets with the mustard and place in the tin.

  4. Mix the chopped pine nuts with the parsley and press on to the salmon fillets.

  5. Transfer the tin to the oven and cook for 15-20mins, until the salmon is cooked.

  6. Mix the puy lentils, watercress, 1 tbsp of olive oil, half the lemon juice. Taste and adjust lemon juice, salt and pepper as needed.  Serve alongside the salmon.

Notes

Salmon is not only delicious but also incredibly nutritious. It's rich in omega-3 fatty acids that are great for reducing inflammation and supporting brain health. Plus, it contains a lot of vitamin B12, which is essential for keeping your red blood cells healthy and your nervous system in good shape.
