

Ingredients
2 red onions, thickly sliced
2 salmon fillets
2 tsp Dijon mustard
25g pine nuts, chopped
a handful of flat leaf parsley, chopped
250g cooked puy lentils
1 bag watercress
1 lemon, juiced
Preparation
Preheat the oven to 180C fan/200C/gas 6
Mix the onions with 1 Tbsp olive oil and sea salt in a roasting tin.
Spread the top of the salmon fillets with the mustard and place in the tin.
Mix the chopped pine nuts with the parsley and press on to the salmon fillets.
Transfer the tin to the oven and cook for 15-20mins, until the salmon is cooked.
Mix the puy lentils, watercress, 1 tbsp of olive oil, half the lemon juice. Taste and adjust lemon juice, salt and pepper as needed. Serve alongside the salmon.
