100g sugar snap peas, steamed
100g broccoli, steamed
1 small carrot, peeled and spiralized or grated
1/2 small courgette, washed and spiralized or grated
6 cherry tomatoes
1/2 orange or yellow pepper, cut into thin strips
1 handful of salad leaves
1 portion of hummus
2 tbsp of toasted mixed seeds
a drizzle of olive oil and lemon juice
Preparation
Build your bowl by using a range of vegetables, proteins, and healthy fats. Adding fresh herbs can enhance the flavour, while nuts and seeds can add a satisfying crunch. In addition to the basic starter recipe above, I like to add:
cooked chicken
feta
poached egg
salmon
beetroot hummus
roasted butternut squash
sprouted seeds
shredded red cabbage
olives
salsa verde
Notes
I absolutely love creating rainbow bowls. Not only are they a great way to add some variety to your meals, but they're also filling and every mouthful is a little different. Plus, they’re super convenient to pack up for lunch on the go and can be prepared in advance.
